Simple Blackberry Mocktail

Tonight Ben got home and sent me off to the gym. I do love it when he insists I get out of the house because most of the time I’m happy to just stay in. Since we’ve moved into our first home, I’ve been so excited to entertain here….but, between moving in November, a long trip to California, the holidays, and then a baby, the entertaining has been a bit sparse (even though we have had “guests” for more weeks of this year than any other…when you have a newborn visitors are helpers not guests). Now that Linc is dutifully sleeping through the night and we’re making a dent in our “to purchase” for the house list, things are shaping up quite nicely.

I put together these simple blackberry mocktails for us this weekend, and they’d be perfect for any last minute or spontaneous spring get-togethers. I just added fresh blackberries and a dash of coconut to some Canada Dry Ginger Ale (although they do have a new blackberry flavor I’m dying to get my hands on – I think it would be delicious with a drop of vanilla for a fun twist). The fresh fruit dresses them up and the bit of flavor gives the drinks a seasonal twist without being too complicated. It’s the kind of thing I’d serve with some fresh fruit + veggies if friends showed up unannounced and I needed something easy but fun.

Simple Blackberry Mocktail:
1 glass gingerale
1 drop coconut extract
fresh blackberries for garnish

^Just an excuse to capture a few pictures of me and Ben while Lincoln gave us some time together this weekend with a long afternoon nap. We sure do love this little baby but it is nice to have some alone time together, just the two of us, like it used to be (except better because I’m in love with him more now and I appreciate time with him significantly more…and I don’t have a HUGE belly and need to go to the bathroom every five minutes). For the past two months I felt like we needed to be sleeping whenever the baby was, just to keep our sanity so it feels wonderful to be able to relax.
