Good morning! I’m having a blast up in Chicago for a short little trip with friends (you can follow our adventures on instagram here), but I’m excited to share some great light springtime snacks with you. Sunday afternoon Ben and I headed to our next door park with a cooler full of of our new favorite frozen treats I grabbed at Walmart on Saturday and enjoyed a little bit of this seventy degree weather.
In the spring and summer, when the days start getting longer and the nights start getting warmer, it seems like I’m asking for a ‘treat’ every night (although lets be serious, I’m looking for something sweet to end the day regardless of what season it is). I love to indulge as much as the next person, but I also love having a few lighter options on hand that don’t sacrifice taste for calories.
I’ve been eating Skinny Cow ice-cream (irregularly) and Outshine bars for years, but this was the first time we tried the ganache cones or the Fruit & Veggie Bars (I’m addicted to the coconut ones). The cones reminded me of a drumstick with better ice-cream and the bars tasted like yummy fruit leather (have you had that?) in a popsicle.
^They’re perfect for warm summer evenings or hot spring afternoons when you just need a little something.
