Last pictures of my time in Texas, promise. Monday night, as part of this sponsored post with the Collective Bias® Social Fabric® Community, I threw together an easy poolside chicken dinner for the teen cousins. By threw together, I mean the whole thing took 20 minutes to shop for, and 20 minutes to put together (now that is a fast and easy way to feed a bunch of teenagers :). We spent most of the week living by the pool, swimming on and off all afternoon and into the evening. This posed the small problem of getting everyone to sit down and eat together because people were never hungry (or dry) at the same time.
I put together a finger food spread with a few veggies, fresh corn, grapes, Tyson Chicken Fries, warm cookies, and some assorted sodas. We had a variety of dipping sauces (dijon mustard, ketchup, ranch, and catelina dressing) for the veggies and chicken fries and it was a fun, healthy, and hassle free way to get these fish some dinner. Next time I’m excited to get a little creative with the dipping sauces. I’d totally serve these at an adult event with fancier dipping sauces (maybe a melted herb cheese?).
It was nothing gourmet, but it was so easy and a great way to eat out by the pool (with so little clean up!). And by the way, the food shone ended up feeding all six of us, plus all the little kids who showed up 🙂
