Easy Homemade Brownies: Cupcake Style

Awhile ago I shared our favorite homemade brownie recipe because I always find myself craving the warm chocolate goodness of a brownie when I’m much too lazy to go to the store and buy a mix. I found the original recipe on pinterest and I think we made them twice in a week. 

For a birthday luncheon, we were all in charge of bringing cupcakes. This was the day after I was in charge of throwing another birthday part, and two days after the blogger meet up, so lets just say I was not in an elaborate cupcake baking kind of mood. And so, here’s the twist on our favorite brownies:


  • 1 1/4 cups margarine
  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups flour
  • 2 tsp vanilla
  • 3/4 cup cocoa
  • 2 cups nuts (optional)


Preheat oven to 350 degrees.

Melt butter and add cocoa; mix. Stir in sugar and blend in the eggs, one at a time. Add vanilla. Stir in flour and nuts; mix well.
Spoon into greased muffin pan. (or you could use cup cake wrappers) and bake in preheated oven (350) for 20 minutes or until fork comes out clean. 
Cool and sprinkle with powdered sugar. Enjoy!

Nutrition: One brownie contains approximately (with walnuts): 224 calories, 3 g protein, 29 g carbohydrates, 1 g fiber, 12 g fat (3 g saturated), 43 mg cholesterol, 20 mcg folate, 1 mg iron, 124 mg sodium.
