As much as I do enjoy a few hours of baking in the kitchen, sometimes you don’t have a lot of time or patience and you’re in need of a delectable (and pretty) dessert. Cue the box of brownie mix. I’m a fan of our easy homemade brownies but I’ll admit I frequently use the boxed mix. I love finding ways to dress up these basic desserts, turning them into drool worthy delicacies you can bring to a dinner party or a summer barbeque. Remember the cookies and cream ones from the fall? Well, these are even better.
What you’ll need:
1 brownie box mix + listed ingredients
1 additional egg
1 C chocolate chips (I used semi sweet but milk would be great)
3 Tbsp chocolate syrup
3 Tbsp cream (substitute whole milk or 2%)
For the frosting:
2 C powder sugar
3 Tbsp hot water
1 Tbsp creamy peanut butter
1/4 tsp vanilla
chopped chocolate chips for garnish
For the batter: Mix as directed on box and add additional egg, chocolate syrup, and cream. Chop chocolate chips and add them to the batter. Pour into a greased pan and bake as instructed.
For the frosting: In a stand mixer (you can do this by hand), whip all ingredients for four minutes (until fluffy). Chop chocolate chips finely and set aside for garnish.
For serving: You can spread frosting directly on brownies in pan and sprinkle with finely chopped chocolate chips, or you can cut them into circles (see pictures). Let the brownies cool completely and use a cookie cutter or a small cup (I used one of our juice glasses). Pipe frosting onto brownies and garnish with chocolate chip shavings.
P.S. You could also totally swirl peanut butter into the batter. I’ve tried it before and loved it.
