30 Minute Easy Garlic and Herb Pulled Pork Sliders

Happy Memorial Day Weekend! With the weather warming up and the daylight lasting a little bit longer, the last place I want to be is in the kitchen. So, I’ve been on the hunt for easy recipes where I don’t have to sacrifice taste, but I do get a few more minutes with my babies back in the evenings (Because have YOU tried dragging in a toddler from an afternoon of bike riding to make dinner? Nearly impossible).

Lincoln’s first request after his nap the other day was to “go grocery store!” so an hour later we found ourselves at Kroger, wandering the aisles in our massive car cart with free balloon in hand. It probably wasn’t our first trip that week. I picked up a Smithfield Marinated Roasted Garlic and Herb Fresh Pork Tenderloin because it was already marinated and I ended up using it as the base for the easiest dinner that is so classically American summer. What I love most about these sliders is the little stand mixer trick for shredding the pork so you’re ready to eat two minutes after the meat comes off of the grill. There’s no standing in the kitchen for fifteen minutes shredding it with a fork and you’re back outside enjoying dinner with the fam before your kids have even noticed you’ve stepped inside.

Feel free to make the sliders your own. If you don’t love onions, skip them altogether. Swap the cheese if you love something else. You get the idea.

It also works super well as leftovers. With just the two of us and little Lincoln (although Adelaide did actually really like the four or five bites she got), this lasted for a full two meals. The next day we switched up the flavors a little bit and it didn’t feel like we were eating the same thing again.

What You’ll Need:

  • 1 Smithfield Marinated Roasted Garlic and Herb Fresh Pork Tenderloin
  • 1 package of slider buns
  • Pepperjack cheese, sliced
  • 1 onion, chopped
  • 1 tablespoon brown sugar
  • 1/2 tablespoon olive oil
  • Baby spinach leaves

What You’ll Do:

  1. Just follow the instructions for grilling the pork tenderloin on the package. It’s listed by weight but should take just around thirty minutes.
  2. While it’s grilling, caramelize the onion by cooking it in a skillet over a low heat with olive oil and brown sugar.
  3. When your pork tenderloin is done, you have to shred it for the sliders. If you have a stand mixer, put on the paddle insert, cut your pork loin into two pieces (I checked to make sure mine was cooked all the way through by cutting it in half), and place in mixer. Mix on high for 1-2 minutes or until the pork is shredded. This makes it SO easy! I love to use this same trick with chicken but it works just as well with pork. Just make sure you put the plastic cover on your mixer so you don’t have anything flying around your kitchen 🙂
  4. Throw your sliced buns on the grill for a minute or two to toast them up before topping them with pulled pork, caramelized onions, pepper jack cheese, and baby spinach.

The meat is flavorful enough on its own that you don’t need any additional sauce but you can get creative with your leftovers!

Sounds delicious, right? And so easy (especially if you skip the caramelized onions, then you’re looking at dinner in under half an hour with 5 minutes of active cooking on your part)!
