Mint Ice Cream Hot Chocolate

There is so much hype around the Thanksgiving dinner, but there also seems to be such little variety. Everyone serves some version of turkey, mashed potatoes, salad, roasted veggies, stuffing, and rolls. And there’s always pie. Not that I should complain—most of that I love (just hold the stuffing). But it just isn’t that exciting, you know?

Today I have a fun dessert recipe for you (keep scrolling), but I also have a few ideas to mix up your thanksgiving recipes if you’re interested. I won’t be trying all of these this year, but I’m planning on swapping out a few of the traditional dishes for these come Turkey Day.

  1. Ditch the Turkey: Last year we did salmon for a friendsgiving we hosted and I loved it. The best turkey I’ve ever had is nowhere close to as delicious as the best salmon or the best steak, so feel free to go with a less than traditional meat choice.
  2. Mix up the Potato: Try a unique potato skin instead of traditional mashed potatoes. Keep a consistent palette (so maybe skip the buffalo potato skins and try a goat cheese + rosemary combo).
  3. Rolls, Rolls, Rolls. I saw a recipe floating around online for pumpkin pie cinnamon rolls. I’m not sure I’d use them to replace crescent rolls on our table but they’d make for an incredible breakfast!
  4. Hors Dorves for the Win: If you’re just looking to add a bit of new flavor to your dinner, think outside the box when it comes to appetizers. Consider a unique bruschetta recipe (I love our goat cheese + mint combo but have seen some great options with candied pecans as well).
  5. Switch out the Pie: Pie is fine. It can be really good even. But I’ll take chocolate + icecream over pie any day. Get exciting with your dessert choice and if you’re worried what guests will think, consider making these after dinner floats to serve along with one pie of your choice.

 

Peppermint Hot Chocolate Floats:
I picked everything up at Target

 

  • 1 box Archer Farms Peppermint Hot Chocolate
  • Mint Chocolate Chip Ice Cream
  • Mini Marshmallows
  • Chocolate Syrup
  • Whipped Cream
A few tips:
  • I recommend using milk to make the hot chocolate for extra creaminess.
  • After you’ve heated the milk on the stove, whisk in the hot chocolate powder right there in the pan to get rid of any clumps.
  • Pour the hot chocolate over a scoop or two of mint chocolate chip ice cream and serve immediately. It is best when the hot chocolate is still hot and the ice cream has just begun to melt!
