Refreshing Strawberry Mint Soda Recipe

Happy almost weekend! Things have been a bit crazy over here with long hours for Ben and big deadlines for me and we are counting down the hours ’til Friday evening. I can almost guarantee we won’t be whipping up another batch of these strawberry mint sodas but if I had any leftover strawberry simple syrup it would be a breeze. Did you know it’s actually quite easy to make your own fruit sodas? It’s just a matter of making a fruit syrup, which can be stored in the fridge and added to your favorite seltzer anytime you need a fizzy drink. Plus, the syrups are also great on pancakes or waffles so do yourself a favor and get cooking this weekend.

P.S. This would be the perfect addition to your Easter brunch and I think I’ll try a blackberry version for when my parents come into town in a few weeks. You can substitute any berry for the strawberries and follow the same directions 🙂

 

Cook time: 15 min. | Prep time: 20 min. | Serves: 10
 

What You’ll Need: 

  • 1 lb. strawberries, cleaned with stems removed
  • 1 cup water
  • ¼ cup sugar
  • Sprigs of mint for garnish
  • 2-liter bottle of sparkling water or fruit soda

What You’ll Do: 

  1.  Boil water, strawberries and sugar on medium, stirring until sugar is dissolved. Then simmer on low for 20 minutes.
  2.  Blend the mixture in a food processor, and then strain through a double cheesecloth to remove any larger parts of the strawberries (don’t skip the food processor part – I tried it without it and it didn’t work very well).
  3. Store your syrup in the fridge until you’re ready to make your soda.
  4. Add 2 liters of sparkling water, or fruit soda if desired. Mix well and serve with a sprig of mint.
