Chocolate Peanut Butter Bars

Some recipes are good enough that they stay in the family for years and years. These I can remember eating on picnics, on road trips, and as after school snacks for years. They’re something we’d always ask for and be so sad when there wasn’t a full cup and a half of peanut butter left in the jar. We pretend with two cups of oatmeal and so much peanut butter that they’re basically healthy…but they taste so good it’s hard to remember 🙂

Remember that fun 24 hour trip we took to New York this summer? I knew we’d be spending Saturday morning on a family hike so I tried to make these before we left on Friday. My disappointment at not having enough peanut butter was made up for that my mom was a few steps ahead of me and met us in NY with a fresh batch. I told you, they’re a family favorite 🙂 easy and ADDICTING oatmeal chocolate peanut butter bars

What You’ll Need:

  • 3/4 C Butter
  • 1 1/2 C Peanut Butter
  • 1 1/2 C Brown Sugar 
  • 1 1/2 C White Sugar
  • 2 Eggs
  • 1 1/2 tsp Baking Soda
  • 1 Tbsp Vanilla 
  • 1 tsp Salt
  • 3 C Flour
  • 2 C Oatmeal
What You’ll Do: 
  • Cream peanut butter, butter, and sugar. Add eggs and vanilla. 
  • Add dry ingredients.
  • Press into a jelly roll pan.
  • Bake at 350 for 12 minutes.
  • Sprinkle with Chocolate Chips and spread when the chips are melted.
