Another 15 Minute Summer Pasta Favorite

Today I’m sharing another 15 minute summer pasta favorite (a few weeks ago I shared our 15 minute carbonara recipe here). When I was home in June my mom made this pasta dish for a quick and easy dinner and I loved it. Last week we had it for dinner three nights in a row (not left overs) and only stopped because we ran out of sausage. The combination of sausage and onions gives it such a rich flavor but with only an olive oil drizzle for sauce, it still feels light. This has been perfect for our summer meals but it wont be going anywhere come fall.

yield: feeds me and ben (2 adults)
time: 15 minutes

What you need:

  • 2 italian sausages 
  • 1/2 box of whole wheat pasta (we use Barilla) 
  • 1/2 large onion
  • olive oil (for cooking and drizzling)
  • fresh parmesan (for sprinkling) 
What you’ll do:
  • Cook whole wheat pasta as directed on box. 
  • While the pasta is cooking, place sausage, chopped onion, and a little olive oil in a sauce pan. Cook over medium heat for a few minutes. Remove sausage from pan with a fork and cut into small pieces. Put the sausage back in pan and sautee with onions until fully cooked.  (If you want you can cut up the sausage before hand, its just significantly harder to do before the edges of it have cooked)
  • Spoon sausage and onions onto warm drained pasta noodles, drizzle with olive oil and sprinkle with fresh parm (I usually add a lot of cheese).

  1. Yummm – looks delicious! They have that at my favorite Italian place here in Hamburg, but they add leek which makes a fresh combination.

  2. So I wanted to prepare a quick dinner tonight and I remembered seeing this post earlier today! I tried it out and it was delicious! I added some cilantro to it to give it a kick 😉 thanks for sharing!
